extended trip food ideas

Hi...

I am going on an extended trip (~3 weeks) and am wondering if anyone has any interesting ideas/recipes for meals using oats, potato flakes, and/or instant rice as a base.

I would suggest you post your query at http://www.backpacking.net/bbs.html. There is a section there devoted to food, so you should get more responsiveness. I am more of a weekend hiker so tend to rely on Mountain House and AlpineAire.

Take couscous

I like to take couscous when I hike. You can buy it in bulk andthrow in a bullion cube, or buy it boxed and 'debox' it for your trek. The boxed kind comes with a flavor packet. The nice thing about couscous is the fact that it has no actual cook time. You just bring the water to a boil and turn off the stove and throw in the couscous. You let it set for 5 minutes and WOW. It saves fuel over rice or other pasta that has to be boiled for several minutes. It also saves pack weight. A tiny bit makes a meal.
