Need Backcountry trail near Houston, TX

Hi, I'm flying to Houston next month to visit a friend of mine, and we'd like to do some backcountry backpacking--we're thinking about a 10-15 mile hike each way. I've already done some research, but I'm having trouble finding a place that has three key attributes we're looking for:

1. camp fires permitted.

2. local water that we can filter to potable status

3. fishing.

I would really appreciate any help.

The four C hiking trail in Davy Crockett Nation Forest might be of interest to you. Also see if you can get your hands on a copy of Hiking and backpacking trails of Texas. It's a little dated (1999) but full of good info. Have a look at http://www.tpwd.state.tx.us for state parks w/ hiking trails that you can search by region and you might try http://www.texashiking.com too.
