I own both the Outback 2 and Outback 4 tents by Eureka.

Ease of Setup: Easily under 5 mins, 3 with practice!
Weight: Around 5 pounds
Price Paid: $199

I own both the Outback 2 and Outback 4 tents by Eureka. They are the best tents I've owned, standing up to relentless rain, high winds, LOTS of use and sometimes even a little abuse. Their light weight makes them ideal for backpacking.

My favorite features have to be the two doors (no more climbing over people), room to sit up without my head touching the top, the two LARGE vestibules for storing gear, and good ventilation which helps prevent the morning wetness you normally get inside a closed up tent. I would HIGHLY recommend either of these tents to anyone out there looking for a quality lightweight tent.
