Backpacker's Pantry Rocky Mountain Scramble

In the continuing search for the perfect potato-based breakfast, this had so much promise. Promise which it sadly fails to live up to. Once again, I ordered up a meal that looked on paper like a potentially solid replacement for my long-lost standard, the discontinued Baco-Cheddar-Mashed Potato of yesteryear. And once again I have eaten something that is...fine. Preparation Per package instructions, I added 1 cup of boiling water, stirred, waited 8 minutes, stirred again, waited another 7 minutes. Heather's Choice Morning Glory Oatmeal

This is a tasty...very tasty...breakfast. Sadly, it's not a very BIG breakfast. Heather's Choice. Made in Alaska, dehydrated, not freeze-dried.Hmmmm....Preparation:3/4 of a cup of boiling water, let stand 5 minutes. The oats were tender and toothsome. Fruit and veg fully rehydrated. Nutrition and Satiety:480 calories in the whole package is a little on the light side for me. Good To-Go Breakfast Hash

Breakfast Hash is a brand-new offering from Good To-Go. Made with butternut squash, feta, and spinach, it's a vegetarian option, but not precisely what I envisioned for a "hash." Breakfast Hash When I hear "hash," I think of hash brown potatoes, or a corned beef hash. Of course, "hash" as a cooking term derives from the French hacher, meaning "to chop." So any diced meal is a hash. But here in the U.S., it is almost always applied to breakfast potatoes with or without some kind of meat. So this...this… Full review

Mountain House Scrambled Eggs with Bacon

A significant improvement over previous iterations of this breakfast, now with significantly less sodium. Nutrition and taste: In the past, this meal has been a salt bomb of epic proportions—no longer!  Sodium content now stands at 1020mg or 42% r.d.a. for the full meal. I could still taste the salt, but it was not overwhelming. I expect this would be thoroughly reasonable for a breakfast to start off a hot, long day of hiking. Much less salty than many similar scrambled-egg breakfast offerings, but otherwise not out of the ordinary. The humble breakfast scramble. Stowaway Gourmet Turkish Delight

Tangy freeze-dried yogurt and puffed whole grains. Intriguing, but ultimately not quite a rousing success. So, another attempt at a backpacking breakfast. I tried this one at home, as I had serious reservations about it.  First reservation: it's a cold breakfast. I tend to prefer hot, savory breakfasts.  And while a cold meal certainly appeals and satisfies on some days, it's an awful gamble out on the trail. But if you like a cold breakfast, here you go! Stowaway Gourmet Miso Salmon Okayu

A tasty, unusual freeze-dried meal. Labeled as a breakfast item, this was thoroughly enjoyable as a midday, mid-hike meal. The salmon presented as large, hugely flavorable chunks of meat that fully rehydrated. Green onion and seaweed were readily identifiable. The miso was pleasantly salty, although just a little overwhelming by the end of the meal. And glory of glories, my gut did not perform its usual objections to a large portion of tofu! My main complaint, however, still resides with the tofu. Full review

OvaEasy Whole Egg Crystals

Will never have to worry about the eggs bag breaking in my pack! When I first saw these several years ago, my first thought was, "more powdered eggs that will taste like regurgitated powder."  The directions seemed very simple—mix contents with water, stir, and cook like normal eggs.  So I made a small batch, making sure to use the exact amounts of eggs and water. They need to be cooked just like "real" eggs without any other special considerations. Of course the final proof is in the eating. Full review

OvaEasy Whole Egg Crystals

These are the best tasting reconstituted eggs I've ever had. The scrambled egg texture, color, and flavor makes it difficult to tell they didn't just come out of the shells. They look, taste, and feel like freshly scrambled eggs. I'm not sure I would be able to tell the difference if I hadn't prepared them myself. I haven't yet prepared them on a trip, but I did a test run at home in my back-country cold-handled skillet on the small stove top burner. I followed the instructions for portioning exactly.
